This St. Louis-based restaurant chain serves “Southern style” smoked pork, beef, chicken, sausage and ribs. Unlike traditional Kansas City barbecued meats, the Bandana’s crew seasons the meat with a dry rub and serves it sauceless so that customers can douse their combo platters with one of four house sauces: a mustard-based concoction, the molasses-rich “Sweet & Smoky,” and not too fiery “hot” and “spicy” variations, often sided by fried corn on the cob. The joint is designed to look like a hillbilly roadhouse (tin washtubs as light fixtures, cloth bandannas hanging at the windows), and country music blares at top volume. - Charles Ferruzza
